Whole Roasted Pumpkin stuffed with Cous-cous yumminess.

So I woke up yesterday and saw that we had a pumpkin in our kitchen that my mum had mentioned to me needed to be used. Oh yeah I’m back from my travels now and I have a real life oven. It’s amazing to be home and be able to eat whatever haha! I googled a recipe and adapted the ingredients I had lying about. Instead of breadcrumbs I used Cous Cous and I also added sultanas,mushrooms and cashew nuts and substituted Swiss cheese for red Lester. I wasn’t sure how it would turn out but it was so so yummy. My friend Georgie came over and we had it for lunch! There was enough left over that my parents had it for dinner too. Smiles all round. So simple to do as well!
